COLLISTON residents will be glad to know that a local institution could soon be back in action.
The Colliston Inn, which closed it’s doors in May has been taken over by keen new owner Cara Patullo.
Cara is understandably cagey about giving too much away while the project is in such early stages, but she did insist that the emphasis will be on quality home cooking.
The Colliston Inn is slated to return as a dedicated eatery, initially as a cafe, however, Cara explained: “We are hoping to expand on having meals in the evening in future.”
One mainstay of the Colliston is set to remain, as Cara admitted there would be “lots of lovely home baking” and fresh potatoes from her family farming business.
Cara added: “We’d been thinking about something similar for a while when Colliston came along and it was just what we were looking for. This is an exciting project for us as a family.”
